but they stain your fingers



I like the color of beets. But I don't like eating beets. When I saw these deep purple carrots at the farmer's market, however, I immediately wanted to make purple carrot soup with them. And it turned out a beautiful dark purple. Maybe if I had done half parsnips and half purple carrots, I would have gotten a light purple soup. Is that too unappetizing?

Of course we ate it, and it was delicious. Theo doesn't eat real food yet, but someday I will make him eat it!

I made applesauce last week with Acane and red Jonathan apples. I didn't account for the fact that the red skin on the Jonathans made the applesauce very pink. The acane apples helped lighten it, but it's still a little weird to me, but it tastes great. Did this taste like your normal carrot soup? I think the deeper color is better.

I think light purple soup would be pretty. I say pretty food is generally delicious and therefore very appetizing. I think you just get into trouble when the food is a color resembling vomit or other bodily fluids. That's when it gets unappetizing.
